Create an Introduction document which explains the project and its structure

For people who want to understand our research methodology and its conclusions, we should have a document which explains how to navigate this repo, similar to a textbook's table of contents or textbooks which have an Introduction chapter which explains how the content of the book was chosen and the structure of each chapter and the mindset and expectations to have when approaching the book.
