Use and enforce dbt modeling best practices

I came across the dbt_project_evaluator package while browsing some of the dbt labs repos. I think it would be worthwhile to update some of our models to follow these best practices, then enforce them by incorporating the evaluator package into a CI check. Low priority, but could be an excellent data engineering intern project.
