Update Multi-Race labels

The content team would like to adopt Multi-race as our standard for charts with demographics. We'd like to request this change in our charts. Here's where the term can be found:

• Health equity: cases/deaths/testing charts relative to percentage of population and per 100K (D3)
• State dashboard: cases and deaths by ethnicity, gender, and age (D3)
• Vaccination data: vaccinated status by group chart (Tableau)

There is a D3 chart on Vaccination data that already uses Multi-race in case we find out that Multi-Race is a preferred convention.

cc: @mediajunkie for prioritization. This isn't urgent, but I also don't think it would take much work. 🙂

Corrected D3 charts on state-dashboard and equity page.

The tableau chart will require working with the folks that maintain that. I'm not sure who that is...
