Save logs to disk
Use sensible names that denote atomic-server version and date
Save to... the atomic folder, I think?
Make saving logs optional

Seems like the crate that we use will add persisting logs as a feature rust-cli/env_logger#178

But it's unclear when.

I could also just switch to https://github.com/drakulix/simplelog.rs

If you run Atomic Server as a service, the logs are already dealt with. Seems like a better approach than hanling it ourselves: #271
