Looking at the datasheet for the BNO-055, it looks like it can support up to +-16g of force for the accelerator. The datasheet says that 4g is the default. How can I go about changing this?

Looks like there is currently no way to change the ranges in the library.

Renamed issue to make it a general request for new feature. Also keep an eye on #107 as a possible fix.
