create four functions (one each) with tests (PART 2)

• @atabak-alishiri & @salva-u to split up top two functions

1. create preprocessing function and docstring (+ tests)
2. EDA plotting and docstring (+ tests)
3. cross validate and best model and docstring (+ tests) -> @farrandi
4. plotting & coefficient interpretation and docstring (+tests) -> @rbouwer
