Just checked and it seems to work correctly. Did you hold interact button pressed before throttling? (E on keyboard or X on gamepad IIRC)
It should also keep throttle low enough to not anger englerfish while "angler safety" is enabled.

BTW, I just realized that I can make different throttling mode: while certain key is pressed, pressing a directional key will adjust acceleration in that direction at constant speed and acceleration won't start going back to zero after that directional key is released. Acceleration will be reset when that directional key is released.
