Could I use this to suppress all values - for instance I have a magnetic variation that is coming in with the incorrect value (can't trace it down yet). I would like to turn all values to zero. Could I use this plug in to do that?

You can use https://github.com/SignalK/node-red-embedded#signalk-input-handler for that Ask in Signal K Slack if you need assistance.
