Looks good. Do you think it would be worth making this into a Template which then makes it easy for people to use it when starting a new project?

That's not how Carpentries website's work.

You use the template of either:

Then you just need to update config.yaml in that repo with the two lines as described here in README.md.

Feel free to update the README if you think that's not clear enough, I just made minimal changes to the existing README.
