I tried the docker-compose.yml file from this Repro. It worked, but after shutting down the container and deleting them, all my changes were gone.
I assumed, that Keycloak was not connecting to Postgres. I checked the database, and no tables were created,
After searching, I found that all Keycloak environment variables have now a KC_ in front. I found this example, an it worked. https://keycloak.discourse.group/t/setup-keycloak-version-21-0-2-with-postgres-using-docker/21345
