Using the combined input of one's gaze + thumbstick to determine the direction of movement is truly he most cursed method of all. Is it possible to use the direction of the off-hand controller instead? I don't see an option for it.

I will second this. Although I move based on head, I recognize accessibility as a major requirement in games, especially VR ones.
