For context, QGIS itself uses GPL2

Would the markdown pages be considered code?

Since we are mainly using markdown pages and text, a CC BY-NC (Attribution-NonCommercial 4.0 International) license could suffice.

I'm not aware of any scripts that are part of the platform but could we use a CC BY-NC license for all the text and training exercise and for the scripts a GPL 3.0? Or simply a GPL 3.0 license for the entire platform?
