Let's create an example distro and base the documentation around it

Thanks! It would be great to work on an example distro next.

Should we put notes on compiling a Linux package & bootloader for Raspberry Pi 3 inside this repo? For instance a docs folder for each supported board inside?

I think it's fine just to target one board in the docs for the time being, and the Raspberry Pi 3 would be a good choice for that. I'll see how far I get with the simplest example possible, while porting PiDeck to use dibby.
