Speaking with @richardjpope about long term self-serve needs, we want to set up a demo hub with https://github.com/yuvipanda/z2jh-configurator (instead of the current jupyterhub-configurator) just to play with and see how it goes

See 2i2c-org/features#26 for more discussion on what this was meant to accomplish.
